By adding brandy, the alcoholic fermentation of the mash is interrupted. This results in a wine with residual sugar and 18 - 20°C alcohol.
In complete contrast to the development of the sherry glass is that of the port glass. Traditionally, the Port Wine Institute advocates a small, spherical glass (similar to the sommelier's Beaujolais Nouveau), which was presented to the Riedel judges last.
The tasting was conducted in glasses used by the oenologists of the port houses, against those glasses offered by Riedel for selection. There was a quick, general consensus in choosing the Tawny glass.
In the subsequent vintage port tasting, the newly crowned Tawny glass surprisingly proved unsuitable to the tasters. Months later, at a second tasting, Riedel succeeded in defining the glass shape that does justice to vintage port and its character.
