The old cognac snifter is dead. In 1988, Hennessy's chief taster Yann Fillioux, together with Georg Riedel, worked on a cognac glass. During the blind tasting of numerous glass shapes, the conventional snifters of different sizes were left behind. It turned out that the so popular balloon glasses have too large an evaporation surface and overemphasize the alcohol and its sharpness.
This doesn't surprise me at all, says Yann Fillioux, at internal tastings at Hennessy, we've been using a narrow, small-volume glass for years.
Conclusion of the blind tasting at Riedel: In the first round, Hennessy's standard quality (V.S.O.P.) was used to adjust the shape and size of the glass.
A small glass with a capacity of 160 ml and a lipped rim was particularly suitable. The V.S.O.R quality developed refined caramel aromas and harmoniously integrated wood in this form. On the palate, the tip of the tongue perceives the fruit, and only in the finish does the cognac develop its well-known fire. This makes the taste experience pleasant without bringing out the sharpness of the alcohol.
