Soufflé or Soufflé (from the French word for breath) is a very light fluffy dish made with egg yolks and stiffly beaten egg whites combined with cheese or sweet ingredients, with vegetables or fish, crab meat or meat. The name soufflé is used for very soft and tender dishes. Soufflés can be served as starters, main courses (cheese soufflé or truffles soufflé) or desserts (cherry soufflé or from other fruits).Salzburger Nockerl are also regarded as soufflés. They can be well cooked and nicely served in special soufflé dishes.
