Grappa is a pomace brandy originating from Italy or Italian Switzerland. Approximately 7-9 liters of pomace brandy with 50% ABV can be obtained from 100 kg of pomace.
The quality of the brandy depends on the quality of the pomace and the distillation technique. In order to prevent the pomace from becoming vinegary, moldy, or rotten, it must be carefully stored until processing.
Extended aging (2 years or more) significantly improves the quality of pomace brandy, making it smoother and softer in taste, with a slightly floral aroma, oily consistency, and a light yellowish color. In France, it is called Marc, while in Italy it is known as Grappa.
Grappa, usually fiery and robust, is transformed into a fragrant experience (autumn meadow) and harmoniously fruity in taste when served in this glass.
