Grappa is a grape marc spirit originating in Italy or Italian Switzerland. From 100 kg pomace a total of about 7-9 l of pomace brandy with 50 % cpl can be obtained.
The quality of the brandy depends on the nature of the pomace and the technique of distillation. To prevent the pomace from becoming vinegary,mouldy or rotting,it must be carefully stored until it is processed.
Longer storage (2 years and longer) considerably increases the quality of a pomace distilled wine,it becomes milder and softer in taste,slightly more flowery in smell,assumes a creamy consistency and a slightly yellowish colour. In France it is called Marc,in Italy Grappa.
Grappa,mostly tangy and coarse,are rounded off from this glass to a fragrance experience (autumn meadow) and tastefully fruity harmoniously.
