Gratin dishes – perfect gratinating.

When gratinating or encrusting a dish the surface forms a brown crust caused by high top heat. In this process carbohydrates and egg white create smoky flavors. For occasional gratinating a normal oven with top heat is perfectly suitable. Meals that are supposed to be gratinated are often covered with a mixture of egg, cream and cheese. Desserts are covered with sugared beaten egg white which is caramelized. The other ingredients already have to be cooked since the gratination does not take very long. The suitable dishes includes rather flat containers or special gratin dishes. Just complete your gratin dishes with noble glasses, ceramics or cutlery!
