When gratinating or encrusting a dish the surface forms a brown crust caused by high top heat. In this process carbohydrates and egg white create smoky flavors. For occasional gratinating a normal oven with top heat is perfectly suitable. Meals that are supposed to be gratinated are often covered with a mixture of egg, cream and cheese.
