The destillation of fermented pomace of red wine mash as well as Brandy made of fermented pomace of sweet wite wine.
100 kg of pomace produce about 7-9 l pomace Brandy with about 50 % Vol.
The quality depends upon the nature of the pomace and upon the technique of the destillation. To avoid the pomace becomining vinegar, gettin mouldy or rottening they have to be stored with care until they are being manufactured.
The longer storage time (2 years and longer) are levering the quality of a pomace-Brandy significantly. It will get more mild and softer, the smell get's ab bit more flowery, it takes a more oily consistence and a slightly yellow color. In France it is called Marc, in Italy it is called Grappa.
Grappa which mostly has very alcoholical and powerfull smell will beconme a smell-experience drunken from this glass. They will smell like a Fall-meadow and they are being rounded in taste.
