Doufeu means casserole. In the cooking process the food is being surrounded by hot steam to keep it juicy and to let it keep its full taste. The lid serves as a container for ice cubes or water and is like a cooling element. The inner side of the lid has knobs which cause the steam to condensate and lets it drop on the food again and again. That way the food is roasted in its own juice.
